For the pudding
500 milliliters milk
1 generous pinch Vanilla bean
80 grams sugar
1 pinch salt
70 grams Semolina flour
1 lemon (zested)
2 egg yolks
2 egg whites
500 grams Pear
4 centiliters Pear brandy
250 milliliters white wine
4 centiliters Port wine
60 grams sugar
1 Cinnamon stick
200 milliliters Cabbage
2 tsps cornstarch
2 Tbsps powdered sugar
For the custard
250 milliliters milk
250 milliliters Whipped cream
1 Vanilla bean
5 egg yolks
100 grams sugar

Preparation steps

1.

For custard: combine cream, milk and vanilla pod and seeds. Bring to a boil.

Beat egg yolks with sugar until creamy in a bowl. Add hot cream milk into egg yolk cream, return to a  pot and whisk on low heat until cream thickens.

Strain custard through a sieve, sprinkle with sugar and let cool.

For the pudding: peel pears, cut into quarters and core, cut into small pieces. Combine with pear brandy.

Combine wine, port, sugar and cinnamon, bring to a boil until syrupy. Add pears together with soaking liquid and poach for 2-3 minutes.

Bring milk, vanilla and sugar to a boil. Gradually add semolina and bring to a boil, stirring. Add lemon zest and let semolina swell for a few minutes.

Combine egg yolks with a little hot semolina, add the rest of semolina.

Beat egg whites until very stiff and fold into semolina cream, add pears. Fill cold pudding mold with pudding and refrigerate. 

9.

Boil cherry juice with powdered sugar in a small saucepan. Mix cornstarch with a little water until smooth, pour into cherry juice, bring to a boil. Remove from heat and let cool.

10.

To serve, invert pudding onto plate and drizzle with cherry sauce. Serve accompanied by custard.
