Semi-frozen Pudding Cups

- 3 eggs
- 4 egg yolks
- 0.333 cup caster sugar
- 1 tablespoon vanilla extract
- 2 cups double cream
- 4 tablespoons Cointreau (or other orange liqueur)
- 1 tablespoon Orange zest

Variations: Limoncello Semifreddo: replace the Cointreau by the same quantity of Limoncello, and the orange zest by lemon zest Peppermint Semifreddo: replace the Cointreau by the same quantity of Peppermint liqueur, and the orange zest by mint crisp or pieces of mint chocolate, and decorate with mint leaves
In a pan set over a low heat, mix the eggs, egg yolks, sugar and vanilla for 5 minutes until the mixture has thickened. Remove from the heat and let cool
In a bowl, whisk the cream until stiff then incorporate to the cooled egg mixture. Add the Cointreau and orange zest.
Spoon the mixture into glasses and freeze for at least 4 hours.
Remove from the freezer about 15 minutes before serving (the mixture needs to start melting slightly)
Serve with chocolate pearls, orange zest or caramel shards.
