- 4 egg yolks
- 0.333 cup caster sugar
- 1 Tbsp vanilla extract
- 2 cups double cream
- 4 Tbsps Cointreau (or other orange liqueur)
- 1 Tbsp Orange zest

Variations:
Limoncello Semifreddo: replace the Cointreau by the same quantity of Limoncello, and the orange zest by lemon zest
Peppermint Semifreddo: replace the Cointreau by the same quantity of Peppermint liqueur, and the orange zest by mint crisp or pieces of mint chocolate, and decorate with mint leaves
Preparation steps
1.
In a pan set over a low heat, mix the eggs, egg yolks, sugar and vanilla for 5 minutes until the mixture has thickened. Remove from the heat and let cool

In a bowl, whisk the cream until stiff then incorporate to the cooled egg mixture. Add the Cointreau and orange zest.
3.
Spoon the mixture into glasses and freeze for at least 4 hours.
4.
Remove from the freezer about 15 minutes before serving (the mixture needs to start melting slightly)
5.
Serve with chocolate pearls, orange zest or caramel shards.
