Scrambled Eggs with Smoked Fish
Rinse, trim and cut leeks into slices on the diagonal. Heat butter in a pan. Add leeks and sauté. Season with salt and pepper.
Whisk eggs with 6 tablespoons water and season with salt and pepper. Heat margarine in a pan. Add eggs and cook until beginning to coagulate. Stir until scrambled.
Cut smoked dogfish into bite-sized pieces. Serve scrambled eggs topped with leeks and fish.
