Hard boil eggs. Peel and leave to cool.
Combine sausage and parsley.
Pour flour, eggs and breadcrumbs in separate bowls. Mold meat mixture around eggs and shape into a large meatball. Dredge meatballs in flour, then egg, then breadcrumbs. Heat oil in a pan and fry meatballs until golden brown, about 3-4 minutes. Remove and drain on paper towels. Serve warm.
