Ingredients

For the scones
1 egg
1 egg yolk
50 grams sugar
1 pinch salt
100 grams soft butter
100 milliliters milk (or yogurt)
300 grams Pastry flour
2 teaspoons Baking powder
1 generous pinch baking soda
For glazing
1 egg white
To serve
Strawberry Jam (to fill)
Banana apricot chutney
Orange marmalade

Preparation steps

Preheat the oven to 220°C (approximately 425ºF).

For the scones, beat the egg and the egg yolks until frothy and combine with the sugar in a mixing bowl. Add the salt, butter and milk/yogurt. Mix the flour with the baking powder and baking soda and add to the bowl. Knead together and dust the dough with flour.

Divide the dough into 12 pieces and shape into scones. Place on a baking sheet with some space between them.

For glazing, beat the remaining egg white with a fork and brush over the scones.

Bake for about 15 minutes until the scones are lightly browned.

To serve, remove from the oven and allow to cool on a wire rack.

Cut in half and serve with jam and fruit for breakfast.
