Red onions (thinly sliced)

Preparation steps

1.
Heat the butter and oil in a large heavy-based pan. Add the onion and garlic, then sprinkle over the sugar, thyme and a sprinkling of salt and pepper. Stir well and reduce the heat.

Cook uncovered for 40-50 minutes, stirring occasionally until the onions are very soft and sticky.
3.
Pour in the wine, vinegar and port and simmer, uncovered for 25-30 minutes, stirring occasionally, until most of the liquid has evaporated. Set aside to cool until warm.
4.
Spoon into warm sterlised jars, cover, seal and label. Serve garnished with thyme sprigs
