Savoury Cake with Feta and Eggplant

3 garlic cloves
2 handfuls Basil
70 milliliters olive oil
salt

1 small Eggplant
200 grams Feta
200 grams Pastry flour
3 tsps Baking powder
3 eggs
100 milliliters Whipped cream
butter (for the baking pan)

Preparation
1.

Preheat oven to 160°C (approximately 325°F). Peel and halve the garlic. Rinse basil and shake dry. Process garlic and basil, together with 50 ml (approximately 1 2/3 ounce) of olive oil in a blender to make pesto. Season with salt and pepper.

Rinse and trim eggplant and chop. Heat 2 tablespoons olive oil in a pan and fry eggplant cubes, turning occasionally, for about 10 minutes. Remove from pan and let cool. Cut feta into cubes.

Mix flour with baking powder, along with eggs, cream and remaining olive oil into a smooth dough. Fold in eggplant, feta and pesto and spread batter into a buttered baking pan. Bake in preheated oven for about 45 minutes (test doneness with a toothpick). Remove from oven, allow to cool and serve.
