Savory Melon Cocktail
This is a delicious, non-alchoholic and summery take on the classic bloody mary, and makes an impressive brunch-time beverage.
Feel free to add vodka to this recipe for an alcoholic variation.
Cut melon pulp and puree. Add freshly squeezed orange juice, honey and mint leaves (set aside some for garnishing). Puree. Season with pepper, lime juice, salt and dash of tabasco, refrigerate for at least 1 hour. Add a little water if needed.
Just before serving, cook bacon in a non-stick pan until crispy. Drain on paper towels.
Pour cocktail into glasses and garnish with bacon and remaining mint. Serve.
