Savory Flatbread with Salami and Green Chiles
This delicious flatbread is a good source of protein thanks to the salami.
If you're vegetarian, simply remove the salami from this recipe.

- ½ cube fresh Yeast (about 0.75 ounce)
- 12 ounces Pastry flour
- Pastry flour (for dusting)
- 3 ½ ounces Crème fraiche
- 1 tablespoon freshly chopped Fresh herbs (such as thyme and oregano)
- 1 egg yolk
- freshly ground peppers
- 2 red onions
- 4 ounces Salami (sliced)
- 6 green chile peppers (canned)
- 2 tablespoons olive oil
Dissolve yeast in about 6 ounces lukewarm water and mix in flour and 1 teaspoon salt and knead into a smooth dough until dough pulls away from the edges of bowl. Cover and let rise for about 30 minutes in a warm place.
Preheat oven to 425°F. Line a baking sheet with parchment paper.
On a floured surface, knead dough and roll out to a large, rounded rectangle and place on baking sheet.
Mix crème fraîche, herbs and egg yolks until smooth and season with a salt and pepper, to taste. Spread mixture over dough and leave a small margin along edges.
Peel onions and halve and cut into thin slices. Spread onions, salami and chile peppers evenly over crème fraîche mixture. Drizzle with oil.
Bake in preheated oven for about 10-15 minutes. To serve, let cool a little and cut into pieces.
