Preparation steps

1.

Stir half of the milk with yeast and sugar. Place the flour in a bowl, make a well in the center and pour in the yeast mixture. Cover the bowl with a towel and let the dough rest for about 15 minutes in a warm place.

Gradually add the eggs, salt, butter and sugar while mixing with the dough hook of an electric hand mixer. Stir in the remaining milk and knead the dough until it is smooth and supple. Cover and let rise until the dough has roughly doubled in size.

Brush a ring pan with butter and sprinkle with hazelnuts. Knead the dough again briefly, place in the pan and let rise again until it has almost reached the edge of the pan.

Bake on the lowest rack of a preheated oven at 200°C (approximately 400°F) for about 35 minutes. Check with a toothpick for doneness. Remove, let cool briefly in the pan, then turn out onto a plate.

Rinse and dry the lemon. Cut thin strips of the peel, chop finely and set aside. Squeeze the juice from the lemon and oranges. This should make about 1/4 liter (approximately 1 cup) of juice. Sweeten with 1 or 2 tablespoons of sugar. Saturate the warm Savarin with the liquid, then allow to cool.

Mix the powdered sugar with lemon juice to form a fairly thick icing and decorate the Savarin.

Mix the prepared fruit with the chopped lemon zest and powdered sugar and let sit for 30 minutes. Pour the fruit into the center of the Savarin, then serve.
