- 18 ozs Broccoli
- Salt and white freshly ground pepper
- 1 Tbsp vegetable oil
- 1 Tbsp butter
- 4 Limes
- 4 thin Veal cutlets (each about 3 oz)
- 4 ozs clear Broth
- pickled, green peppercorns
Preparation steps
1.
Rinse broccoli and divide into florets. Cook in a little salted water for 3-4 minutes.

Rinse limes in hot water and pat dry, grate zest of two limes and squeeze juice. Halve veal cutlets transversely and season with salt and pepper.

Heat oil and butter in a pan and brown cutlets on both sides. Remove cutlets from the pan and keep warm.

Deglaze pan drippings with broth and lime juice, add half of lime zest and simmer briefly. Season with salt and stir in green peppercorns. Cut remaining limes into thin slices. Arrange cutlets with the sauce and lime slices on plates and garnish with remaining lime zest. Serve accompanied by broccoli.
