50 grams butter
250 grams onions
1 kilogram Sauerkraut
1 large Apple (200 grams)
150 grams lean Bacon
20 Juniper berries
¼ liter Beef broth (prepared)
6 slices Pork belly
4 thick Mettwurst
4 Garlic sausages
400 grams starchy potatoes

Preparation steps

Heat butter in a pot. Peel, chop and sauté onions in butter. Add sauerkraut. Peel apple, remove core and seeds, cut into wedges and add to pot. Finely chop bacon and add to pot. Cook, stirring, about 10 minutes. Stir in juniper berries and 1/4 liter (approximately 1 cup) beef broth. Stir in sliced pork belly, cover and simmer over low heat, about 40 minutes. Add sausages during the last 15 minutes of cooking time. Rinse, peel and cook potatoes in salted boiling water, about 20 minutes. Drain.

Arrange sauerkraut on a large preheated platter. Top with sausage and pork belly and serve with potatoes.
