7 ozs sugar
1 pinch salt
2 tsps Vanilla sugar
½ organic lemon
3 ½ ozs blanched almonds (ground fine)
9 ozs butter
5 ozs Raspberry jelly

Preparation steps

In a mixing bowl, whisk together the flour, sugar, salt, vanilla sugar, and ground almonds. Grate the lemon zest and add to the dry ingredients. Add the butter to the flour and work into the dry ingredients to make a smooth dough. Gather the dough into a ball, wrap, and refrigerate for 30 minutes.

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

Roll out the dough on a floured surface approximately 3/16" thick. Use a square cookie cutter (about 3/4" square) to cut out the dough. Cut out decorative shapes from half of the cookie squares.

Arrange the cookies on the baking sheets and bake until golden, about 10 minutes. Transfer to a wire rack and cool completely.

Heat the raspberry jelly until it is liquefied. Spread the jelly on the solid square cookies and add a shaped cookie on top to complete the sandwich. Let the cookies set up for several hours before packing into airtight containers.
