Using a 2-inch cutter, cut bread into 16 rounds.
Using an electric mixer, beat the cream cheese, sour cream, and mustard together. Spread the mixture on prepared canapé bread rounds. Top with a cucumber slice and 2 pieces of salami (artfully folded) and a piece of cheese. Secure with a wooden pick. Transfer to serving platter and garnish with fresh parsley sprigs and pickle slices. Keep chilled until ready to serve.
