Salami and Prosciutto Puff Pastry Sandwiches
Preheat the oven to 200°C (approximately 400°F). Line a baking sheet with parchment paper.
Roll the puff pastry out to about 3 mm (approximately 1/10 inch) thin. Whisk the egg yolk with about 1 tablespoon of water and brush over the puff pastry. Sprinkle with the sesame seeds and cut the puff pastry into rectangles, stars, or shape of your choice. Bake for 15 minutes, until puffed and golden brown. Remove from the oven, let cool, then slice each in half horizontally.
Mix together the cream cheese and chopped parsley. Rinse the scallion and slice thinly. Cut the salami into small pieces and mix with chopped scallions and about half of the cream cheese mixture. Spread the salami mixture onto half of the puff pastry sandwiches.
Assemble the remaining puff pastry sandwiches with a layer of the cream cheese mixture, a few slices of prosciutto and a drizzle of olive oil. Place the sandwiches on a large platter and serve.
