350 grams Rabbit fillet

4 Tbsps Game stock (jarred)
2 firm Pear
50 grams Pine nuts
100 grams Celery root
100 grams lamb's lettuce
For the vinaigrette
3 Tbsps balsamic vinegar

Preparation steps

1.

For the salad: Wash rabbit fillet, pat dry and season with salt and pepper. Heat 2 tablespoons oil in a pan, fry rabbit fillets on both sides, remove from pan and wrap in aluminum foil. Deglaze pan drippings with game stock and pour everything into small bowl.

Peel, halve and core pears. Cut halves lengthwise into narrow slices. Heat remaining oil in frying pan and carefully fry pear slices. Toast pine nuts in a second, dry pan. Peel celery and cut into thin slices, then cut slices into thin strips.

Rinse Mache thoroughly, shake dry and spread across 4 plates.

For the vinaigrette: Combine specified ingredients to form vinaigrette and mix the gravy.

Cut Hare fillet diagonally into thin slices and serve with pears on top of Mache. Garnish each salad with strips of celery, sprinkle on pine nuts and drizzle with vinaigrette.
