8 Pickled herring
¼ liter milk
100 grams Green beans
1 Beefsteak tomato
2 large cooked potatoes
1 tart Apple (such as Granny Smith)
1 tablespoon lemon juice
2 onions
150 grams Crème fraiche
100 grams acid Whipped cream
1 teaspoon medium hot Mustard
salt
freshly ground peppers
3 tablespoons Wine vinegar
½ bunch Dill

Preparation steps

1.

Rinse the herring and marinate for 1 hour in milk.

Trim the ends of the beans and blanch for 5 minutes in heavily salted, boiling water. Drain, chill in ice water till cool and drain again.

Blanch the tomato, peel, halve, remove seeds and dice. Peel the potatoes and cut into cubes. Peel the apples, quarter, core and cut into small dice. Immediately sprinkle with the lemon juice. Peel the onions and cut into rings.

Combine the crème fraîche with the sour cream, mustard, salt and pepper and season with vinegar. Rinse the dill, finely chop and mix half with the sauce. Drain the herring, pat dry, and dice. Mix all ingredients and serve.
