Salad with Duck Livers and Orange Fillets
Rinse and spin dry letuce.
Rinse oranges in hot water and grate zest. Peel, removing as much pith as possible, and fillet. Rinse and halve grapes, remove seeds, if necessary. Peel shallot and cut into thin rings.
Whisk vinegar with cinnamon and season with salt and pepper. Rinse duck livers and pat dry. Heat oil in a pan and cook livers until golden on all sides. Arrange livers with the rest of salad ingredients on plates and drizzle with spiced vinegar, mix well and serve.
