freshly chopped Fresh herbs (thyme, rosemary, oregano)
Olive oil (for the baking pan)

Preparation steps

Crumble the yeast and dissolve in 125 ml (approximately 1/2 cup) of lukewarm water. Add the milk, sugar, salt, and oil. Knead with the flour in a food processor or a mixer with a dough hook. Cover and let rise in draft-free place for about 50 minutes.

Put the dough on a floured surface and knead briefly. Form into a roll and cut the dough into 6 equal pieces of dough. In three of the roll, fold in the bacon. In the other three, fold in the chopped herbs. Roll each out into rectangles, about 20 x 5 cm (approximately 8 x 2 inches). Smash the ends. Grease two baking pans with olive oil and place all of the loaves of bread seam side down. Cover and let rest for about 20 minutes.

Preheat the oven to 180°C (approximately 350°F). Place a small ovenproof bowl with boiling water in the oven. Score each loaf with a sharp knife and make several deep cuts diagonally, about 1 cm (approximately 1/3 inch) deep. Bake for about 20 minutes until golden brown.

To serve, let cool and cut into slices once completely cooled.
