200 grams Pastry flour
3 egg yolks
3 Tbsps Whipped cream
1 tsp Baking powder
1 pinch salt
2 Tbsps Vodka
Pastry flour (for dusting)

Preparation steps

Sift the flour into a bowl then mix in the egg yolks, cream, baking powder, salt and vodka until smooth. On a lightly floured work surface, roll out thinly and cut into 2 x 12 cm (approximately 3/4 x 5 inch) strips. Cut a slit in the center of each strip and gently pull the sides apart so there is a gap in the center. Heat the butter to 170°C (approximately 325°F) and, working in batches, deep-fry the strips until golden brown, around 2-3 minutes. Drain on paper towels and serve immediately.
