130 grams Pastry flour
2 tablespoons sugar
1 packet Vanilla sugar
1 pinch salt
6 eggs
250 milliliters milk
2 tablespoons raisins
2 centiliters Rum
clarified butter (for baking)
1 tablespoon powdered sugar
powdered sugar (to sprinkle)

Preparation steps

Separate eggs. Combine flour, salt, powdered sugar, sugar and egg yolks. Whisk well and let sit for 30 minutes. Soak raisins in rum. Beat egg whites until stiff.

Stir batter again thoroughly and fold in egg whites. In a large ovenproof skillet in hot butter fry 1 thick pancake, turn and finish cooking on other side.

Then tear pancake into small pieces, add rum raisins, sprinkle with powdered sugar and caramelize in a hot oven at 225°C (approximately 425°F).

Before serving, sprinkle with powdered sugar.
