Rum Cocktail with Coconut Water
Make a hole in the coconut, then pass the water from the coconut through a strainer into a shaker filled with some crushed ice. Crack the coconut and cut the flesh into strips. The coconut you're not using can be sealed in airtight packaging so they don't dry out, and used for another purpose.
Add the coconut syrup, rum, soda water, and lime juice to the shaker. Shake strongly until thoroughly combined. Divide the remaining crushed ice into 2 glasses, then pass the cocktail through a strainer into the glass. Serve the cocktails garnished with the coconut and straws.
