Ruby Orange Vodka

Pare the zest from 5 oranges using a peeler, making sure that none of the bitter white pith is included.
Put the zest, cinnamon and 1 vanilla pod in a large clean jar and pour in the vodka. Squeeze the juice from 1 orange and add to the jar. Seal tightly and leave for 1 week, shaking the jar each day.
Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved. Add to the vodka mixture, then leave for a further week, shaking the jar regularly.
Slice 1 remaining orange thinly and place in bottles with the remaining vanilla pods. Pare the zest from the remaining orange and place in the bottles.
Strain the vodka mixture into bottles and seal tightly. Store in a cool dark place and use within 6 months.
