Ingredients

4 eggs
1 pinch salt
110 grams sugar
120 grams Pastry flour
½ tsp Baking powder
1 packet Vanilla sugar
sugar (for the cloth)
For Filling
1 lemon (for juice and zest)
500 grams Strawberries
50 grams powdered sugar
200 grams Whipped cream
2 pkgs whipped cream stabilizer
250 grams Quark
powdered sugar (for dusting)

Preparation steps

Spray baking sheet with a little water, line with baking paper well flatenned at the edges.

Separate eggs.

Beat egg yolks with 50 grams (approximately 1 3/4 ounces) of sugar and 3-4 tablespoons of water until fluffy.

Beat egg whites with salt until stiff, sprinkle with remaining sugar and continue beating until glossy.

5.

Gently fold 1/3 of egg whites into egg yolk mixture with a spatula.

Spread remaining egg whites on top of mixture. Mix flour and baking powder in a bowl. Sift over egg whites.

Fold in carefully with a whisk.

Spread dough in the center of prepared baking sheet.

Dough should be evenly spread, thick and smooth.

Bake in preheated oven at 200°C (approximately 400°F) for about 10 minutes or until bright golden yellow.

Remove dough sheet from oven and place onto kitchen towel sprinkled with sugar. Remove baking paper.

Roll up dough sheet with towel carefully. Let cool.

Prepare filling.

Rinse and dry strawberries, remove stems. Set aside few strawberries for garnishing. Cut remaining strawberries into small pieces.

Beat cream until stiff.  Add powdered sugar, lemon juice and zest, mix until smooth. Add quark. Fold cream into strawberries.

Unroll sponge roll on large plate, spread strawberry cream evenly on top, leaving a margin on the side to which roll is to be rolled up.

17.

Roll up roulade carefully using kitchen towel. Place on a plate, seam side down, and sprinkle with remaining sugar. let cool for 1 hour.

18.

To serve, cut into slices and garnish with remaining strawberries.
