5 eggs
1 pinch salt
125 grams sugar
125 grams Pastry flour
1 tsp Baking powder
1 Tbsp Vanilla sugar
sugar (to sprinkle)
For Filling
500 grams Strawberries
250 milliliters Whipped cream
1 packet whipped cream stabilizer
250 grams Quark
2 Tbsps lemon juice
50 grams powdered sugar
powdered sugar (for dusting)

Preparation steps

 Separate eggs. Beat egg whites with salt until stiff. Beat egg yolks with sugar until creamy. Combine flour, baking powder and vanilla sugar, fold in egg whites. Fold in egg yolks.

Spread mixture evenly on a lined baking sheet.

Bake in preheated oven at 200°C (approximately 400°F) until golden brown for about 10-12 minutes., Take out and carefully invert onto kitchen towel sprinkled with sugar. Peel off parchment paper and roll up with a towel. Let cool.

Rinse, dry and hull strawberries. Set few strawberries aside. Cut remaining strawberries into small pieces. Beat cream with cream stabilizer until stiff. Mix quark with 2-3 tablespoons of cream, powdered sugar and lemon juice until smooth. Add the rest of  cream. Fold in strawberries.

Unroll biscuit sheet. Spread strawberry mixture on it, leaving one margin free (that is the margin in which direction buscuit will be rolled up).

Roll up buscuit gently, using kitchen towel. Slide on a plate, seam side down, and sprinkle with powdered sugar.

Decorate the whole roulade (or individual slices) with strawberries and serve.
