2 Boneless rabbit loins (each about 75 grams)
2 sprigs rosemary (about 20 cm long)
5 onions (about 250 grams)
1 garlic clove
600 grams small tomatoes
2 fresh bay leaves
2 teaspoons olive oil
70 milliliters Vegetable broth

2 Wooden skewers, 1 Measuring cups, 1 Teaspoon, 1 Small knife, 1 Cutting board, 1 Non-stick pan, 1 Pot (with lid), 1 Wooden spoon

Preparation steps

Trim the sinews from rabbit loins. Cut loins in half crosswise and then cut into thin strips.

Rinse rosemary sprigs and shake dry. Pierce a hole all the way through each rabbit strip with a wooden skewer.

Thread 2 rabbit strips onto each rosemary sprig.  Chill in the refrigerator.

Peel the onions and garlic and thinly slice both.

Rinse tomatoes, wipe dry and cut into quarters. Rinse bay leaves and shake dry.

Heat 1 teaspoon olive oil in a pot. Sauté onion and garlic. Add vegetable broth and bay leaves and simmer, covered, for about 15 minutes over low heat.

Meanwhile, heat the remaining oil in a non-stick pan. Season the skewers with salt and pepper, add to the pan and cook over medium heat, turning, until seared on all sides. Reduce heat to low and cook until rabbit is cooked through, about 5 minutes more.

Add the tomatoes to the pot, cover and cook for about 5 minutes over low heat. Season with salt and pepper. Serve skewers with the tomatoes.
