175 grams soft butter
150 grams sugar
4 eggs
2 Tbsps Rose water
1 untreated lemon (Juice and Zest)
175 grams Pastry flour
40 grams ground almonds
1 tsp Baking powder
For the Frosting
150 grams soft butter
70 grams sugar
150 grams cream cheese
1 Tbsp Rose water
170 grams powdered sugar

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Fill a cupcake-tin with paper baking cups.

Mix the butter with the sugar until fluffy. Beat the eggs, rose water, flour, lemon juice, zest, ground almonds and baking powder into the butter and sugar mixture. Mix well and pour into the cupcake-tin. Bake in the oven for about 25 minutes or until golden brown. Remove from oven and let cool.

For the frosting: mix the butter with the sugar until creamy. Stir in the cream cheese and the rosewater. Add as much powdered sugar as it takes for the frosting to become spreadable. Set aside half of the mixture. Add a few drops of food coloring to the remaining half until pink. Fill two piping bags with serrated nozzles with each half and decorate the cupcakes.
