Preparation steps

1.

Rinse the potatoes, peel, pat dry and cut into slices. Saute in 2-3 tablespoons of oil for about 10 minutes until crisp and light brown.

Rinse the mushrooms and cut into pieces. Rinse and halve the tomatoes. Peel and thinly slice the shallot and garlic. Add the mushrooms, garlic and shallot to the potatoes. Add the remaining oil and saute for another 5-10 minutes.

3.

Add the rosemary and tomatoes. Season with salt and pepper. Sprinkle with the crumbled cheese. Serve garnished with arugula.
