Roasted Pork Loin with Herb Paste
Peel and finely chop onion. Stir onion with 1 tablespoon oil, tomato paste and herbs. Season with salt and pepper. Cut a piece of aluminum foil that is twice as long as pork loin. Place foil on the work surface.
Spread half of the herb paste on the foil. Rinse pork loin with cold water and pat dry. In a roasting pan, sauté pork loin briefly in 2-3 tablespoons oil. Transfer meat to foil.
Roll meat to coat with herb paste on all sides. Wrap meat with foil and seal firmly. Bake in a preheated oven at 100°C (approximately 200°F) on the middle rack, at least 3 1/2 hours.
Remove roast from oven, slit a small opening in the foil and pour juices into a bowl. Let meat rest 5 minutes, then remove foil and serve sliced.
