Preheat the oven to 180°C (approximately 350°F).
Slice the top and bottom of the garlic. Place the garlic in an oiled baking dish and sprinkle with the herbs. Season with salt and pepper, and drizzle with the remaining oil.
Bake for 30 minutes, or until the cloves are soft.
Sprinkle with lemon juice. Serve with mayonnaise if you'd like.
