Preheat oven to 200°C (approximately 400°F). Rinse apples, remove stems and core if desired (or leave apples whole). Transfer apples to a baking casserole dish. Rinse the organic orange with hot water, pat dry and finely grate zest. Squeeze juice from all of the oranges and mix with zest. Drizzle juice over apples and top with butter (cut into small pieces). Bake until apples are soft, about 30 minutes.

Meanwhile, stir together quark, yogurt, cinnamon and 2 tablespoons maple syrup until smooth.

Place baked apples on plates. Stir remaining maple syrup into orange juice in baking pan. Drizzle juice over apples and dollop each with a tablespoon of quark sauce. Serve remaining quark sauce on the side.
