Roast Pork Chops with Fruit

1 Paper towel, 1 Cutting board, 1 Small knife, 1 Citrus juicer, 1 Large knife, 1 Kitchen shears, 1 Brush, 1 Roasting pan mit Deckel, 1 Tablespoon, 1 Slotted spatula, 1 großer Plate, 1 Measuring cups, 1 Vegetable brush, 1 Pot mit Deckel, 1 Fork zum Pellen, 1 Toothpick oder Nadel
Dry the chops and flatten slightly. Wash, dry, quarter and core the apples and cut into wedges. Heat the butter and briefly fry the apple wedges, then transfer to an ovenproof dish and keep warm in the oven (70 °C with fan). Season the chops with salt, white pepper and curry powder and dust with flour. Heat the clarified butter in the frying pan used for the apples and quickly fry the chops on both sides. When done, take out, place on top of the apple wedges and keep warm. Put the raisins and mustard seeds into the pan, fry briefly, then deglaze with white wine. Boil until reduced, then add the veal stock and boil to reduce slightly. Season to taste and pour the sauce over the fried apple wedges.
