Ingredients

2 tablespoonswhite balsamic vinegar
2 tablespoonslemon juice
6 tablespoonsolive oil
1 teaspoonhoney
1 teaspoonhot Mustard
crushed Red pepper flakes ground
14 ouncesWatermelon cut into approx. 5 mm slices
3 cupsSalad mix e. g. chicory, sorrel, nettle, dandelion, rocket
1 ⅓ cupsFeta cheese sliced

Directions

1 Whisk together the vinegar, lemon juice, 4 tbsp oil, the honey and the mustard, and season to taste with sea salt and chilli.
2 Drizzle the watermelon with the remaining oil. Season lightly with salt and grill on a hot barbecue or griddle pan on both sides for 4-5 minutes.
3 Mix the salad leaves with the dressing and arrange on plates with the feta. Add the melon pieces and serve.
