Preparation steps

Rinse goose, pat dry and remove the fat gland at the end of the spine. Salt the inside of the goose and insert thyme sprigs.

Peel, quarter and core the apples and dice. Combine the raisins, sugar and breadcrumbs and mix with apples. Fill the goose with apple mixture in the abdominal and head openings. Secure openings using toothpicks or kitchen twine.

Sprinkle the outside of the goose with salt.

Pour 1 cup of water in a roasting pan. Place the goose, breast side up and pierce the skin on the sides of the chest several times to allow the fat to escape during cooking. Preheat oven to 200°C (approximately 400°F) and cook for about 3 hours skimming the fat often. Once the goose is well browned, add some water to the pan and cover. Uncover the pan in the last 10 minutes of cooking and sprinkle the goose with 1 tablespoon of sugar. Remove the roasted goose and keep warm. Skim fat from drippings and pour drippings through a sieve into a saucepan. Add enough water to drippings to measure 750 ml (approximately 3 cups). Mix the flour with a little cold water until smooth. Bring drippings to a boil, stir in the flour mixture to thicken and season with salt and pepper.

Wash beans, cut ends and boil in salted water for about 6 minutes until al dente. Drain beans and immediately immerse in cold water to halt cooking. Divide beans into 12 portions. Shape into bundles and wrap each bundle with a slice of bacon. Fry bundles in oil until bacon is crisp.

Serve the goose with the green beans and boiled potatoes.
