1 ⅕ kilograms Roast beef (shoulder)
3 tablespoons clarified butter
salt
peppers (coarsely ground)
300 grams marbled Bacon (thin slices)

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Rinse meat and pat dry. Heat clarified butter in a roasting pan, add meat and brown on all sides for about 5 minutes. Remove and rub with salt and pepper. Wrap bacon around roast to cover and place directly on oven rack (with a drip pan underneath) and roast for 90 minutes. Use a meat thermometer inserted in center to determine if roast is done. 70°C (approximately 150°F) is rare while 85°C (approximately 175°F) is well done.

Remove, let stand briefly, slice and serve with cabbage if desired.
