- all-purpose flour (for the dishes)
- For the soufflé mixture
- 0.333 cup all-purpose flour
- ⅔ cup milk
- ⅔ cup cream
- 1 ½ cups grated Gruyere (or Emmentaler)
- ½ tsp salt
- peppers
- ground Nutmeg
- 4 egg yolks
- 1 tsp Baking powder
- 4 egg whites
Preparation

Mix the flour smoothly with a little milk. Put the rest of the milk and the cream into a pan and bring to the boil, stirring. Stir in the mixed flour and simmer for one minute. Add the grated cheese, salt, pepper and nutmeg and stir occasionally until the cheese has melted. Set aside.

Leave the mixture to cool slightly then stir in the egg yolks one at a time. Also stir in the baking powder.

Beat the egg whites until very stiff and fold into the mixture. Butter the soufflé dishes, dust with flour and fill three-quarters full with the soufflé mixture.

Bake in an oven preheated to 200°C | 400F | gas 6for about 20 minutes. Serve immediately in the dishes.
