1 Orange
400 milliliters Red wine
100 milliliters Port wine
100 milliliters Currant juice
50 grams sugar
4 Pear
For the rice pudding
2 tablespoons butter
200 grams Arborio rice
800 milliliters milk
2 tablespoons sugar
1 teaspoon Ground cinnamon

Preparation steps

Rinse and dry the orange. Cut away the peel, squeeze the juice into a saucepan and bring to a boil with the peel, red wine, port wine, black currant juice and the sugar.

Peel and core the pear, leaving the stem intact. Add to wine broth, making sure they are covered, and simmer for 5 minutes on low heat. Remove from the heat and let cool.

For the rice pudding, combine the rice and butter in a hot saucepan and saute until soft. Add in some milk, just to cover, and then sprinkkle with the sugar. Keep adding milk to the rice, stirring occasionally, until the risotto is creamy, but the rice still has a bite to it (approximately 15 minutes). Remove from heat and stir in the cinnamon.

Remove the pears from the poaching liquid and halve horizontally. Spoon some rice pudding into serving glasses and top with the pears. Serve immediately.
