For the rice pudding
800 milliliters milk
1 Vanilla bean
1 Cinnamon stick
2 Star anise
200 grams Arborio rice
3 eggs
50 grams butter
50 grams sugar
For the caramel
4 tablespoons sugar
In addition
1 tablespoon brown sugar
butter (for the pan)

Preparation steps

Combine milk with slit vanilla pod, cinnamon stick and star anise and bring to a boil. Add rice. Simmer on low heat for about 30 minutes, stirring occasionally. Let cool. Separate eggs.

Whisk butter with sugar, add egg yolks and beat until thick and frothy. Remove vanilla bean, cinnamon stick and star anise from rice mixture. Add rice to butter mixture. Beat egg whites until stiff and very carefully fold into pudding.

Melt sugar in a saucepan, add 4 tablespoons of water and pour into 4 lightly oiled ovenproof ramekins. Pour rice mixture into ramekins, dot with butter pieces and sprinkle with brown sugar. Bake in preheated oven at 200°C (approximately 400°F) for about 45-50 minutes or until golden brown. Remove from oven and invert onto plates. Serve.
