- 2 ½ teaspoons active dry yeast
- ½ cup warm water
- 1 tablespoon honey
- ¾ cup Brown rice flour
- ¾ cup Almond flour
- ½ cup oat flour
- ½ cup Buckwheat flour
- ¼ cup Quinoa flake (plus extra for sprinkling)
- 2 tablespoons Coconut flour
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- ¼ cup olive oil
- 3 eggs (beaten)
- ⅜ cup warm water (to mix)
Preparation steps
1.
Sprinkle the yeast into one the water and stir in the honey. Set aside for 5 minutes.

Grease a 900g|2lb loaf tin.
3.
Put the dry ingredients into a mixing bowl and stir well.
4.
Make a well in the centre and pour in the yeast. Beat in the oil and eggs and. Gradually beat in the water until the mixture is smooth and thick.
5.
Put into the tin and smooth out the top. Sprinkle with quinoa flakes.
6.
Leave to stand for about 50 minutes, until risen.
7.
Heat the oven to 180°C (160° fan) 350°F gas 4.
8.
Bake for 55- 60 minutes, until crusty and browned. Place the loaf on a wire rack to cool.
