400 grams Pappardelle noodles
400 grams Cherry tomatoes
2 garlic
2 shallots
1 carrot
3 tablespoons olive oil
400 grams mixed Ground meat
1 teaspoon Tomato paste
150 milliliters Beef broth
Sea salt
peppers (freshly ground)
1 sprig Lemon basil
4 tablespoons Ricotta cheese

Preparation steps

Cook the pappardelle noodles according to the package instructions until al dente. Rinse the tomatoes. Peel the garlic and the shallots, and chop finely. Peel the carrot and dice finely.

Heat oil in a pan and saute the ground meat until crumbly. Add in the shallots and garlic and cook for a few minutes. Then stir in the tomato paste and pour in the beef broth. Add in the cherry tomatoes and simmer for about 15-20 minutes. Season with salt and pepper.

Rinse and pluck the lemon basil leaves, and cut into strips. Drain the pappardelle noodles and add into the ground meat sauce.

Transfer to a warm plate. Sprinkle with basil and a tablespoon of ricotta cheese. Serve immediately.
