2 cups Rhubarb (cut into 2 inch pieces)
¼ cup sugar
½ tsp ground ginger
¼ tsp cinnamon
¼ tsp Nutmeg
1 Tbsp grated Orange peel
1 Tbsp butter (solid)
1 cup Granola
1 cup Vanilla ice cream

Preparation steps

1.
Preheat oven to 375 degrees F/190 degrees C.

In a large mixing bowl, combine rhubarb, sugar, ginger, cinnamon, nutmeg, orange rind and butter. Stir until well incorporated.
3.
Transfer to a greased baking dish and bake for 30 minutes, until rhubarb has softened and the liquid is bubbling.
4.
Transfer to individual serving dishes and top with granola and ice cream to serve.
