20 ounces Rhubarb
5 ounces Apple juice
4 ounces sugar
3 tablespoons Campari (or san bitter)

Preparation steps

1.

Rinse, peel, and dice rhubarb. Boil rhubarb with approximately 2/3rd cups of water and apple juice. Simmer for about 10 minutes.

Remove from heat and pass through a sieve, reserving broth and discarding solids. Mix broth with sugar and campari. Place in a shallow dish and freeze for 4-5 hours, stirring every 20 minutes. Spoon into glasses and serve.
