500 grams Rhubarb
1 Vanilla bean (marrow)
1 Orange (juice)
50 grams sugar
2 centiliters Orange liqueur
125 grams Amaretti cookies
50 grams chopped Hazelnuts
100 milliliters Whipped cream
150 grams Mascarpone
2 tablespoons elderflower syrup
mint (for garnish)

Preparation steps

1.

Trim the rhubarb, rinse and cut into small pieces. Put in a saucepan with the vanilla seeds, orange juice, sugar and liqueur and bring to a boil. Simmer about 5 minutes, so that the rhubarb has slight bite. Tranfer to a bowl and leave to cool.

Coarsely chop the amaretto cookies. Mix with the nuts. Whip the cream. Mix the mascarpone with the syrup and fold into the cream.

3.

Pour the rhubarb compote into small glasses and top with crumbled cookes. Put on a dollop of the cream, and serve garnished with mint.
