2 kilograms Rhubarb (Bright red)
42 grams Yeast
200 milliliters milk
500 grams Pastry flour
120 grams sugar
1 egg
1 egg yolk
10 grams salt
10 milliliters Rum
70 grams butter
1 teaspoon cinnamon
50 grams breadcrumbs
For the streusel
100 grams butter
100 grams sugar
200 grams Pastry flour

Preparation steps

For the base: Dissolve the yeast in the milk. Sift the flour and mix with the milk and yeast. Add 100 grams (approximately 1/2 cup) of sugar, the egg, egg yolk, salt, rum, and butter. Mix into a smooth dough. Dust the finished dough with some flour and let rise in a warm place until it is double in volumes. Clean the rhubarb and cut into 3-4 cm (approximately 1- 1 1/2 inch) long pieces.

For the streusel: Crumble all the ingredients together by rubbing between two hands. Chill.

Preheat the oven to 220°C (approximately 440°F). Knead the dough again and let rise for another 10 minutes. Roll out the dough evenly and line a parchment-lined sheet tray. Prick several times with a fork. Sprinkle with the breadcrumbs. Arrange the rhubarb pieces on the dough. Mix the remaining cinnamon with the sugar and sprinkle over the rhubarb. Let rise for about 15 minutes. Spread the streusel over the bar and bake for 35-40 minutes. Let cool and cut into squares before serving.
