Bring the water, white wine, lemon juice, sugar, vanilla seeds, and vanilla pods to a boil.
Place the rhubarb pieces in a single layer in a baking dish with high sides. Pour the hot vanilla mixture over the top.
Preheat the oven to 160°C (approximately 320°F). Bake for 12-15 minutes, then remove and let cool in the cooking liquid. Serve in bowls, if you wish.
