200 grams soft butter
200 grams sugar
4 eggs
1 pinch salt
2 teaspoons Baking powder
450 grams Pastry flour
100 milliliters milk

200 grams Pastry flour
100 grams ground almonds
150 grams sugar
150 grams melted butter
For the topping
1 kilogram fresh Rhubarb
2 tablespoons Vanilla sugar
powdered sugar (for dusting)

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Butter and flour a baking tray.

For the dough, mix the softened butter until fluffy. Alternately add in the sugar and the eggs. Add the salt. Mix the baking soda with the flour and add to the butter. Add the milk, stirring quickly into a smooth spreadable dough. Spread onto the baking tray and smooth out.

For the streusel, mix all the ingredients in a bowl and rub repeatedly between two hands until it forms a crumbly consistency. Chill until ready to use.

For the topping, rinse the rhubarb, and pat dry. Cut into 1-2 cm (approximately 1/3-1/2 inch) sized pieces, and mix with the vanilla sugar. Spread the rhubarb mixture evenly on the dough and cover with the streusel. Bake in the preheated oven for about 45 minutes. Check to see if the cake is finished with a toothpick. Remove from the oven and let cool. Serve dusted with powdered sugar and cut into pieces.
