125 grams softened butter
125 grams sugar
½ packet Vanilla sugar
2 eggs
200 grams Pastry flour
50 grams cornstarch
1 ½ tsps Baking powder
50 milliliters milk
2 tsps Cocoa
6 Paper cupcake liners (and 1 small muffin tin)
200 grams dark Couverture
100 grams ground almonds
50 grams white Couverture
6 red, round Fruit gummies

Preparation steps


Beat the butter until creamy Add the sugar and vanilla sugar and continue to beat until creamy again. Add the eggs one at a time beating well after each addition. Mix together flour, salt, cornstarch and baking powder. Stir the flour mixture into the butter mixture alternating with 30 ml (approximately 1/8 cup) of milk.

Separate the dough into two bowls. Sift the cocoa into a third bowl and stir in the remaining milk. Stir the cocoa mixture into one of the dough bowls.

Lay out the muffin tin with paper cups. In each muffin cup place a spoonful of dark cupcake batter, then a light spoonful cupcake batter. Gently stir the two batters with a fork and bake the muffins in an oven preheated to 180°C (approximately 350°F) for about 30 minutes. Remove and let cool.


Melt the dark chocolate over a water bath. Fill a pastry bag fitted with a small tip. Pipe 12 moose antlers on parchment paper and allow to set. Stir the almonds into the remaining chocolate and spread on the cupcakes.

Place the red fruit jellies as the noses on the cupcakes. Melt the white chocolate over a water bath. Fill a pastry bag fitted with a small tip and shape the eyes on the cupcake. Fill the pupils with dark chocolate. Place the dried moose antlers on the cupcakes and serve.
