Redfish with Vegetables in Foil
Rinse fish, pat dry with paper towels and place each on a large piece of aluminum foil. Butter and season with pepper, top with cilantro leaves, ginger and peppercorn.
Rinse and dry lemon, halve and cut into slices
Place lemon slices on the fish.
Wrap fish in aluminum foil and tightly seal the edges. Fill a wide pot with 3 cm of water and bring to a rolling boil. Place packages in pot and cook over low heat for about 15 minutes (open packages after 10 minutes and taste to see if more cooking is needed).
Serve on plates still in foil along with small potatoes and steamed carrots.
