Redfish with Herbs Baked in Foil
Place 2 rectangular pieces of aluminum foil on a flat surface. Spread each with tomato slices. Grate lemon zest and then slice the lemon. Place lemon slices on top of tomato slices. Drizzle each portion with 1 tablespoon of white wine.
Place redfish fillets, skin side down, on tomatoes and lemon.
Chop herbs finely (set some aside for garnishing). Combine with oil and breadcrumbs, season with salt and pepper. Spread herb mixture on fish fillets, sprinkle with lemon zest and fold in foil, sealing well.
Bake in preheated oven at 140°C (approximately 275°F) for about 15 minutes. Remove from the oven and uncover carefully. Garnish with remaining herbs, season with salt and serve immediately.
