Ingredients

For the dough
200 grams Pastry flour
200 grams butter
100 grams powdered sugar
100 grams ground Hazelnuts
1 egg
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
1 teaspoon grated Lemon peel
1 tablespoon lemon juice
For the filling
1 Tort Wafer (round)
400 grams Red currant jam
1 egg yolk
powdered sugar (for dusting)

Preparation steps

1.

For the dough: Combine all dough ingredients and knead into a smooth dough. Shape into a ball, wrap with plastic and chill for 1 hour.

Press 2/3 of the dough into the springform pan. Top with wafers and top with redcurrant jam, leaving a 1 cm (approximately 1/3 inch) margin around the edges.

Roll 2/3 of remaining dough and cut into 1 cm (approximately 1/3 inch) wide strips. Arrange strips in a grid pattern on the jam. Press remaining dough onto the edges of the pie. 

4.

Beat egg yolk with a splash of water and brush onto dough. Bake in an oven preheated to 175°C (approximately 350°F) for 50 minutes. Remove and let cool. Dust with powdered sugar, slice and serve.
